  1. GREASE AND FLOUR 13X9X2” PAN. COMBINE FIRST 6 INGREDIENTS. ADD NEXT 3 INGREDIENTS, BEAT UNTIL COMBINED.

    • 3 OZ CREAM CHEESE ¼ CUP BUTTER OR MARGARINE 1 TSP VANILLA 2 CUPS POWDERED SUGAR

    1. BEAT TOGETHER CREAM CHEESE, BUTTER AND VANILLA UNTIL LIGHT AND FLUFFY. GRADUALLY ADD POWDERED SUGAR, BEATING TIL SMOOTH. SPREAD OVER COOKED CAKE, SPRINKLE WITH CHOPPED NUTS IF DESIRED.

    Ingredients

    • 1/2 cup (1 stick) butter, softened 1 cup light brown sugar 3 tablespoons granulated sugar 1 large egg 2 teaspoons vanilla extract 1-3/4 cups all purpose flour 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1-1/2 teaspoons instant espresso coffee powder 1-1/2 cups semi-sweet chocolate chips

    Instructions

    1. Preheat oven to 300 degrees. Cream the butter with the sugars using an electric mixer on medium speed until fluffy (approximately 30 seconds) Beat in the egg and the vanilla extract for another 30 seconds. In a mixing bowl, sift together the dry ingredients and beat into the butter mixture at low speed for about 15 seconds. Stir in the espresso coffee powder and chocolate chips. Using a 1 ounce scoop or a 2 tablespoon measure, drop cookie dough onto a greased cookie sheet about 3 inches apart. Gently press down on the dough with the back of a spoon to spread out into a 2 inch circle. Bake for about 20 minutes or until nicely browned around the edges. Bake a little longer for a crispier cookie. Makes 2 doz

    Super Salad

    Ingredients

    • 1 pkg lemon Jell-O, ! c boiling water,  1 C cold water, 1 c crushed pineapple (drain and SAVE liquid),2 large bananas, 1 c mini marshmallows.
    •  Frosting: Take saved pineapple juice + water to make 1 cup add 1/2 c sugar, 2 T flour, 1 egg beaten, 1 T butter

    Instructions

    1. Dissolve jello and boiling water, then add 1 cup of cold water.  Place in refrigerator until it just starts to congeal. Add pineapple, banana and marshmallows, put in refrigerator. Frosting: Cook on med heat the frosting mixture until thick and COOL. Whip 1 pkg dream whip & pineapple mix together, spread this frosting over completely cooled jello, let stand over night.
    This recipe was a family favorite on mine when I was a little girl for the Holidays.  My step Mom, Jannie Donnermeyer made this and was one of my favorites as a little girl.

    Moms Pancakes

    1. Mix eggs,milk and soda together. Beat in remaining ingredients until well mixed. Pour in hot skillet, when pancake starts to bubble and pop flip to other side. For Banana pancakes place sliced (thin) bananas (approx 5 slices) on top of pancakes after pouring into pan. For 30 people……….. 10 eggs, 15 c milk, 5 t baking soda, 15 c flour, 10 t sugar, 1 1/4 c shortening, 10 t baking soda, 5 t salt.

    Ingredients

    • 1 box of beef rice a roni 4 potatoes 1 onion 1 lb Hamburger

    Instructions

    1. Cook hamberger and drain Cook rice a roni Fry up cubed potatoes and onions in butter. Once all is cooked all all together

    This is an old favorite that the kids really liked when little plus it went along way.

    1. Put steak in pan add can of mushroom with equal of water add fresh mushrooms. add salt and pepper. Bake at 350
    2. till meat is cooked. Serve with mashed potatoes and a vegetable.

    Ingredients

    • 1 Cup of White Karo 1 cup Sugar1 cup of creamy peanut butter 6 cups of rice 1 pkg of semi sweet chocolate chips 1 pkg of butterscotch chips

    Instructions

    1. 1. Place corn syrup and sugar into 3-quart saucepan. Cook over medium heat, stirring frequently, until sugar dissolves and mixture begins to boil. Remove from heat. Stir in peanut butter. Mix well. Add KELLOGG’S RICE KRISPIES cereal. Stir until well coated. Press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Set aside. 2. Melt chocolate and butterscotch chips together in 1-quart saucepan over low heat, stirring constantly. Spread evenly over cereal mixture. Let stand until firm. Cut into 2 x 1-inch bars when cool.

    Note: Before measuring the corn syrup, coat your measuring cup with cooking spray–the syrup will pour easily out of the cup.

    Old Fashioned Taffy

     

     

     

    : Old Fashioned salt water Taffy

     

    1. Taffy1 cup white sugar
    2. 1 Tablespoon of white corn syrup
    3. 1 Tablespoon butter
    4. 1/2 cup water.
    • Cook over moderate heat until putting a few drops in a dish of cold water, the mixture will form a ball and hold it’s own shape (or 254 on a candy thermometer)
    • Remove from heat and add food coloring and flavoring if you wish. Pour mixture on a buttered platter.Cool until you can easily handle. Butter your hands and start to pull the taffy. Pull it till it becomes light in color. Then pull into a roll, snip off bits and wrap in individual pieces of wax paper.

    Shrimp Chili

     

    Shrimp Chili

    Recipe: Shrimp Chili
    • 2 T of Olive Oil
    • 2 Med Onions (diced)
    • 1 Large Jalapenos or Serrano chili
    • 6 cloves of Garlic
    • 1/2 t red pepper flakes
    • 1 T Cajun spice

    SAUCE:

    • 2 Large cans of Tomato sauce
    • 1 can of Herdaz Salsa
    • 4 tomatoes, diced up
    • 1-2 T cumin
    • 2 T of chili powder or Cajun spice
    • 1-2 T of Hot Louisiana Red sauce
    • 1 T Garlic powder
    • 1-cup raw pinto bean (soaked and then cooked)
    • 1-Cup raw black beans (soaked and cooked)
    • One Pound of medium Shrimp.
    Preparation:
    Soak beans over night in water. Cook on low till beans are done. Save bean water
    Cook first 6 ingredients in fry pan with olive oil till onions are translucent. 
    Add remaining ingredients and cook on low till all is well blended.
    Add the saved bean liquid to chili sauce.
    One Pound of medium Shrimp.   Boil Water and drop Shrimp in boiling water for 1 minute.  Take out and cool quickly.  Add Shrimp to Hot chili before serving. 
    Serve with Cilantro, cheese, avacado and chips.
    If you don’t have Chili powder Below is a great Chili powder mix
    • Ingredients:•
    • 1 teaspoon paprika•
    • 2 teaspoons ground cumin•
    • 1 teaspoon cayenne pepper or Cajon spice• 1 teaspoon oregano•
    • 2 teaspoons garlic powder
    Combine all ingredients; store in an airtight container.
    Number of servings (yield): 8
