  • INGREDIENTS 2 pounds LARGE shrimp, uncooked, pull the skin/tails off 1 finely chopped onion 1 cup olive oil 1 tsp sugar 1 tsp cayenne peper 1/2 tsp salt 1/2 tsp oregano 1 tsp garlic powder 1/4 cup Maple Syrup Optionally a pound-o-bacon


  1. In a large bowl, mix everything togather (except bacon) and then add shrimp. Leave it in the fridge overnight (PREFERABLE) or at least for several hours. Flip occasionally to distribute shrimp marinade. Pull out from fridge an hour or so beforehand to let things warm/loosen up a bit. The next day, preheat your bbq grill while skeweriung the shrimp. Optionally place flat on a fine-screen mesh cookware – less work! Wrap in bacon and grill. Be careful about flames from the dripping marinade. Serve over rice, pasta, or as-is … but be sure to drip some marinade on ‘em!

Serve with a green salad and tortillas or fresh Italian bread. This is an easy to fix, hearty meal that makes a great addition to fall dinners or party menus. For parties serve in a big mexican bowl with a large spoon for guests to dish out their own into small paper or plastic bowls. Have plenty of plastic spoons. Serve with corn chips.

BBQ Avacados

  • 4 avacados
  • 1 can of Hernadez salsa
  • 2 T olive oil


Cut each avacado in half. Take seed out. Rub olive oil on the meat side. Grill meat side down on hot grill till brown, 10 min on high Turn upside and add salsa to middle, place back on grill for 5-8 more minutes.

Beer Shrimp

 Beer shrimp

  1. 2 lbs of shrimp
  2. 4 cans of beer of choice
  3. 4 Large Garlic cloves
  4. 2 dried whole red pepper

  1. Shell & clean shrimp, place in refrigerator to cool
  2. Boil Beer with Garlic and pepper for 10 minutes
  3. Prepare a ice bath for shrimp once done. Use a large bowl with Ice and cold water.
  4. Drop shrimp in boiling beer for approx 1.5 MINUTES depending on size of shrimp. Once the shrimp turns pink/orange and starts to curl remove from heat ASAP and drain and place in ICE BATH right away. The Ice bath will stop the shrimp from continuing to cook and get rubbery.

Recipe: PaPas Bread Stics


  1. Dough
  2. 1 cup warm water (70 to 80 degrees)
  3. 3 tablespoons soft butter
  4. 1 1/2 teaspoons salt
  5. 3 cups bread flour
  6. 2 tablespoons sugar
  7. 1 teaspoon italian seasoning
  8. 1 teaspoon garlic powder
  9. 2 1/4 teaspoons active dry yeast
  10. Topping (Parmesan and or Garlic)
  11. 1 tablespoon melted butter
  12. 1 tablespoon grated parmesan cheese
  13. 1 Tablespoon Melted Butter
  14. 2 Large minced Garlic cloves
  1. Mix the water (temp important), sugar and yeast together and let sit for 8 minutes
  2. Add yeast mixture & butter to the flour and mix with large spoon until to hard to mix .
  3. Put mixture on a large area with some flour spread out on the surface to prevent sticking to surface, kneed for 10 minutes, if to sticky add more flour, if to dry add 1 tbsp of water. Dough should feel a little tacky but not sticky, nice and silky feeling.
  4. Cut each portion into 12 pieces and roll each piece into a 4 to 6″ rope. You can twist if you like.
  5. Place 2″ apart onto greased baking sheets.
  6. Cover and let rise in a warm place for about 20 minutes or until doubled.
  7. Bake at 350° for 15 minutes or until golden brown.
  8. Immediately brush with butter and sprinkle with Parmesan cheese.
  9. Note: Be careful not to overbake or they will become tough.

Shrimp Chili


Shrimp Chili

Recipe: Shrimp Chili
  • 2 T of Olive Oil
  • 2 Med Onions (diced)
  • 1 Large Jalapenos or Serrano chili
  • 6 cloves of Garlic
  • 1/2 t red pepper flakes
  • 1 T Cajun spice


  • 2 Large cans of Tomato sauce
  • 1 can of Herdaz Salsa
  • 4 tomatoes, diced up
  • 1-2 T cumin
  • 2 T of chili powder or Cajun spice
  • 1-2 T of Hot Louisiana Red sauce
  • 1 T Garlic powder
  • 1-cup raw pinto bean (soaked and then cooked)
  • 1-Cup raw black beans (soaked and cooked)
  • One Pound of medium Shrimp.
Soak beans over night in water. Cook on low till beans are done. Save bean water
Cook first 6 ingredients in fry pan with olive oil till onions are translucent. 
Add remaining ingredients and cook on low till all is well blended.
Add the saved bean liquid to chili sauce.
One Pound of medium Shrimp.   Boil Water and drop Shrimp in boiling water for 1 minute.  Take out and cool quickly.  Add Shrimp to Hot chili before serving. 
Serve with Cilantro, cheese, avacado and chips.
If you don’t have Chili powder Below is a great Chili powder mix
  • Ingredients:•
  • 1 teaspoon paprika•
  • 2 teaspoons ground cumin•
  • 1 teaspoon cayenne pepper or Cajon spice• 1 teaspoon oregano•
  • 2 teaspoons garlic powder
Combine all ingredients; store in an airtight container.

Instead of honey use, 1/2 c sugar Instead of self rising use, 3 cups flour 1 1/2 t salt 4 1/2 t baking powder
