Ingredients

  • 4 eggs 2 c milk 1 c Bisquick Vegetables of your choice. Place cut up vegetables of your choice on the bottom of 2 well greased pie pan. Mix together the eggs, milk and Bisquick together and pour on top of vegetable. Cook at 400
  • for 35 minutes. Easy and good

Variations

Use any vegetables of your choice and be creative.

Zucchini Lasagna

Ingredients

  • 4 Large zucchini, scrubbed, sliced thin and long, leave skin on
  • 1 quart spaghetti sauce or thick tomato sauce
  • 1 cup bread crumbs
  • 1 pound ricotta cheese or cottage cheese for light version.
  • 4 eggs, lightly beaten
  • 2 Tablespoons mixed Italian seasoning mushrooms,
  • sliced tomatoes, sliced broccoli or any vegetable you like
  • Salt & pepper to taste 1 cup grated Parmesan or Romano cheese 1 pound mozzarella cheese, coarsely grated

Instructions

  1. Slice zucchini into long slices with skin, 1/8 inch to 1/4 inch thin . Cook in boiling water just until limp, about 5 minutes. Drain on paper towels. Combine ricotta, eggs, parsley, seasoning and half of the parmesan cheese and half of the bread crumbs in a bowl. Set aside.
  2. In a well greased 9×13 pan, spoon a thin layer of tomato sauce. Sprinkle with a quarter of the bread crumbs. Layer each of your vegetables then layer of zucchini slices over like you would lasagna pasta. Spoon half of the reserved ricotta mixture on top of the zucchini. Sprinkle with half the mozzarella cheese. Start again with sauce and layer again your vegetables and zucchini slices, cheeses till you top with sauce and remaining mozzarella and Parmesan. Bake in a 350 degree oven for about 1 hour or until top is brown. Let stand 20 minutes before cutting.

Quick Notes

Be sure to grease the pan well. Enjoy with many different kind of vegetables.

  • 1 egg, beaten 1 1/2 c buttermilk 1/2 t baking soda 1 1/2 c flour 1 t sugar 2 T shortening 1 t baking powder 1/2 t salt

Instructions

  1. Mix eggs,milk and soda together. Beat in remaining ingredients until well mixed. Pour in hot skillet, when pancake starts to bubble and pop flip to other side. For Banana pancakes place sliced (thin) bananas (approx 5 slices) on top of pancakes after pouring into pan. For 30 people……….. 10 eggs, 15 c milk, 5 t baking soda, 15 c flour, 10 t sugar, 1 1/4 c shortening, 10 t baking soda, 5 t salt.

  1. Cook hamberger and drain Cook rice a roni Fry up cubed potatoes and onions in butter. Once all is cooked all all together

This is an old favorite that the kids really liked when little plus it went along way.

  1. Put steak in pan add can of mushroom with equal of water add fresh mushrooms. add salt and pepper. Bake at 350
  2. till meat is cooked. Serve with mashed potatoes and a vegetable.

Annie’s Turkey

: Annie’s Turkey

  1. 15 lb turkey
  2. 6 Carrots
  3. 6 Celery
  4. 2 apples
  5. 1 pear
  6. 1/2 Onion
  7. Garlic

  1. Stuff cleaned bird with whole celery, carrots, cut up Onion, 1 whole Apple cut in half, Pear cut in half. Also fresh herbs, Rosemary, Sage and Tyme
  2. Rub turkey skin with butter and coconut oil. Place herbs all on the outside of turkey, under skin under wings.
  3. Garlic cloves all around turkey in pan.
  4. Breast down in roasting pan. Cover with foil.
  5. 20 min at 425
  6. Remainder 325
  7. Baste every hour inside and on top.
  8. Flip turkey in pan, basted and recovered and put back in oven.
  9. Take out of Oven and let sit and stand.
  10. Enjoy
